  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 1/4 cups all-purpose flour, spooned and leveled
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon fine sea salt
  • 2 cups semi-sweet chocolate chips

Instructions

  1. Brown the butter in a light-colored saucepan over medium heat for 5-8 minutes until nutty and golden. Pour into a bowl and cool for 20-25 minutes until solid but soft.
  2. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  3. In a large bowl, beat the cooled brown butter with brown sugar and granulated sugar for 2-3 minutes until combined.
  4. Beat in eggs one at a time, then mix in vanilla.
  5. In a separate bowl, whisk together flour, cornstarch, baking soda, and salt.
  6. Gradually mix dry ingredients into wet ingredients on low speed until just combined.
  7. Fold in chocolate chips with a spatula.
  8. Optional: Chill dough for 30 minutes to 72 hours for better flavor.
  9. Scoop dough into 3-tablespoon balls and place 3 inches apart on baking sheets.
  10. Bake for 10-12 minutes until edges are golden and centers are soft.
  11. Cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For best results, do not skip browning the butter or adding salt. The dough can be frozen for baking later. A light-colored baking sheet prevents burnt bottoms.
