A bright, make-ahead breakfast inspired by summer blueberries and a grandmother’s memory. This recipe requires no cooking, just a few minutes of prep before bed for a creamy, dreamy, and sunny-flavored breakfast ready in the morning.

Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk of choice
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon chia seeds
  • 1 tablespoon pure maple syrup or honey
  • 1 teaspoon fresh lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 cup fresh or frozen blueberries
  • Pinch of salt

Instructions

  1. In a jar or medium bowl, combine the rolled oats, chia seeds, lemon zest, and salt.
  2. Add the milk, Greek yogurt, maple syrup, and lemon juice. Stir vigorously until completely combined and no dry spots remain.
  3. Pour half of the oat mixture into your serving jar. Add a layer of half the blueberries.
  4. Top with the remaining oat mixture and finish with the remaining blueberries on top.
  5. Seal the jar tightly and refrigerate for at least 4 hours, or ideally overnight, until thickened.

Notes

For best texture, use old-fashioned rolled oats, not quick oats. Ensure the mixture is well stirred. Oats can be stored in the refrigerator for up to 4 days. For a vegan version, use plant-based milk and yogurt.
