  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 1/2 cup fresh blackberries
  • 1/4 cup apricot jam or apple jelly, for glazing

Instructions

  1. Make the cookie crust: Preheat oven to 350°F. In a large bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  2. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet, mixing just until a soft dough forms.
  3. Press the dough evenly into a greased 12-inch pizza pan or a large baking sheet lined with parchment. Use your fingers or a measuring cup to create a smooth, even layer.
  4. Bake for 12-15 minutes, or until the edges are just beginning to turn light golden brown. Let the crust cool completely on a wire rack.
  5. Make the creamy layer: While the crust cools, beat the softened cream cheese, powdered sugar, and vanilla in a medium bowl until smooth.
  6. In another bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until no white streaks remain.
  7. Assemble: Once the crust is completely cool, spread the cream cheese mixture over it in an even layer, leaving a small border.
  8. Arrange the washed and dried berries on top in your desired pattern.
  9. Add the glaze: Gently warm the apricot jam with a teaspoon of water until liquid. Using a pastry brush, lightly dab the glaze over the arranged fruit.
  10. Slice and serve immediately, or chill until ready to eat.

Notes

Ensure the crust is completely cool before adding the cream cheese layer to prevent melting. For best results, assemble the pizza no more than 2-3 hours before serving. The crust can be baked and frozen ahead of time.
