  • 3 ripe bananas (with brown speckles), sliced
  • 1 (3.4 ounce) box instant vanilla pudding mix
  • 2 cups cold milk (whole or 2%)
  • 1 cup plain Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups vanilla wafers, divided (some crushed for layers)
  • 1 cup whipped topping, for garnish

Instructions

  1. In a large mixing bowl, whisk the instant pudding mix with the cold milk for about 2 minutes until it begins to thicken. Let it sit for 5 minutes to set further.
  2. Gently fold in the Greek yogurt and vanilla extract until the mixture is smooth and creamy. This is your pudding base.
  3. In 4 to 6 individual serving cups or jars, begin layering. Start with a spoonful of the pudding mixture.
  4. Add a layer of sliced bananas, then a sprinkle of crushed vanilla wafers.
  5. Repeat the layers: more pudding, more bananas, more crushed wafers, until the cups are filled, ending with pudding.
  6. Cover the cups and refrigerate for at least 2 hours, or ideally overnight.
  7. Just before serving, top each cup with a dollop of whipped topping and a whole vanilla wafer.

Notes

For best flavor, use very ripe bananas. Do not skip the chilling time, as it allows the wafers to soften and flavors to meld. For a make-ahead option, assemble the cups (without the final whipped topping) up to 3 days in advance. Add the whipped topping garnish right before serving.
