These soft and chewy banana oatmeal bars are the perfect make-ahead breakfast or snack. Made with simple pantry staples and naturally sweetened with ripe bananas, they’re a wholesome treat the whole family will love.

Ingredients

  • 3 large very ripe bananas (about 1.5 cups mashed)
  • 2 cups old-fashioned rolled oats
  • 0.5 cup creamy peanut butter or almond butter
  • 0.25 cup pure maple syrup or honey (optional)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup chocolate chips, nuts, or dried cranberries (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, mash bananas until mostly smooth.
  3. Add peanut butter, maple syrup (if using), and vanilla extract. Stir until well combined.
  4. Add oats, cinnamon, baking powder, and salt. Mix until oats are fully coated.
  5. Fold in optional mix-ins if using.
  6. Transfer mixture to prepared pan and press down firmly and evenly.
  7. Bake for 25-30 minutes until edges are golden and top is set.
  8. Cool completely in pan before slicing into bars.

Notes

Use very ripe bananas for best sweetness and texture. Let bars cool completely before slicing to prevent crumbling. Bars can be stored in refrigerator for up to 1 week or frozen for 3 months.
