A grab-and-go breakfast that tastes like a warm slice of banana bread but requires zero morning effort. Creamy oats, ripe banana, and warm spices meld together overnight for a nourishing, comforting start to the day.

Ingredients

  • 1/2 cup old-fashioned rolled oats
  • 1/2 cup milk (whole, almond, oat, or coconut)
  • 1 medium very ripe banana, mashed
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon chia seeds
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • Pinch of ground nutmeg
  • Pinch of salt
  • Optional: chopped walnuts, pecans, protein powder, or dark chocolate chips

Instructions

  1. In a 12 to 16-ounce jar, use a fork to mash the ripe banana until mostly smooth.
  2. Add the rolled oats, chia seeds, cinnamon, nutmeg, and salt (and any dry optional mix-ins like protein powder or nuts) to the jar.
  3. Pour in the milk, maple syrup, and vanilla extract.
  4. Seal the jar with a lid and shake vigorously for 30 seconds, or stir very well with a spoon until completely combined. The mixture will be liquidy.
  5. Place the jar in the refrigerator for at least 4 hours, ideally overnight, to allow the oats to absorb the liquid and the flavors to develop.

Notes

For best texture, give the jar a shake or stir about an hour into chilling. Store in the refrigerator for up to 4 days. Use certified gluten-free oats for a gluten-free version. For a higher protein version, add a scoop of protein powder with the milk.
