Ingredients

Scale
  • 1 pound fresh asparagus spears, ends trimmed
  • 8-10 slices of prosciutto, thinly sliced
  • 2 tablespoons olive oil
  • 1 tablespoon pure maple syrup or honey
  • 1 tablespoon balsamic glaze, plus more for drizzling
  • 1/2 teaspoon garlic powder
  • Freshly cracked black pepper
  • Flaky sea salt, for finishing (optional)
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  2. Wash asparagus and snap off tough ends. Pat spears completely dry with a kitchen towel.
  3. In a small bowl, whisk together olive oil, maple syrup, balsamic glaze, and garlic powder.
  4. Place dried asparagus on the baking sheet. Drizzle with glaze and toss to coat. Season with black pepper.
  5. Wrap one slice of prosciutto snugly around a bundle of 3-4 asparagus spears. Repeat with remaining ingredients.
  6. Arrange bundles on the baking sheet, leaving space between each.
  7. Roast for 15-18 minutes, until prosciutto is crisp and asparagus is tender-crisp.
  8. Transfer to a platter. Drizzle with extra balsamic glaze and sprinkle with sea salt and Parmesan if desired. Serve warm.

Notes

Ensure asparagus is completely dry before glazing to prevent steaming. Do not overcrowd the baking pan for crispier prosciutto. Bundles can be assembled up to 4 hours ahead and refrigerated before baking.
