These soft and tender sugar cookie bars are made with almond flour and naturally sweetened. They are a simple, healthier treat perfect for Valentine’s Day or any sweet craving. The texture improves after a day, making them ideal for make-ahead desserts.

Ingredients

  • 3 cups blanched almond flour
  • 1/4 cup coconut flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon fine sea salt
  • 1/2 cup melted coconut oil, cooled slightly
  • 1/2 cup pure maple syrup or honey
  • 1 large egg, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1/3 cup sprinkles (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
  2. In a medium bowl, whisk together almond flour, coconut flour, baking soda, and salt.
  3. In a large bowl, whisk the melted coconut oil, maple syrup, egg, and vanilla until smooth.
  4. Add the dry ingredients to the wet ingredients. Mix with a spatula until a soft dough forms. Fold in sprinkles if using.
  5. Transfer dough to the prepared pan. Press into an even, compact layer using damp hands or a flat cup.
  6. Bake for 18-22 minutes, until edges are light golden and top is set. The center may look soft.
  7. Cool in pan on a wire rack for 30 minutes. Lift out using parchment and cool completely before slicing.

Notes

For clean slices, cool completely before cutting. Store in an airtight container in the fridge for up to a week. These bars freeze well for up to 3 months. Avoid over-baking as almond flour can burn quickly.
