A lightning-fast, no-cook snack that transforms sweet mini peppers and a creamy cheese filling into a protein-packed, colorful bite. Perfect for instant hunger relief, impromptu guests, or a healthy grab-and-go option.

  • 1 lb (about 20-24) mini sweet peppers
  • 8 oz cream cheese, softened to room temperature
  • 1/2 cup finely shredded sharp cheddar cheese
  • 1/4 cup finely chopped fresh chives or green onions
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika, plus more for garnish
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Rinse the mini peppers and pat them completely dry with a clean kitchen towel. Slice each pepper in half lengthwise and use a small knife to remove the seeds and white membrane.
  2. In a medium bowl, combine the softened cream cheese, shredded cheddar, chives, garlic powder, smoked paprika, salt, and pepper. Mix until well-combined and smooth.
  3. Spoon or pipe the cheese mixture into each pepper half. For piping, transfer the filling to a zip-top bag, snip off a corner, and pipe into the peppers.
  4. Arrange the stuffed peppers on a platter. Garnish with an extra sprinkle of smoked paprika and chopped chives. Serve immediately.

Notes

For a smoother filling, ensure cream cheese is fully softened. Peppers can be prepped and filling made up to 2 days ahead; store separately and assemble just before serving for best texture. For a higher-protein version, blend 1 cup full-fat cottage cheese with 2 tbsp grated Parmesan and herbs until smooth.
